Butter Bean Dip

Butter Bean Dip. Add the beetroot and cook for 10 minutes or until it is tender. After soaking the butter beans for 8 hours drain and discard the soaking water.

Serve with some fresh crudites. Simmer for 1 hour or so until they are tender. Blend until as smooth as possible.

Place into a serving bowl and sprinkle with smoked paprika harrisa seasoning and black cracked pepper and then drizzle some extra olive oil over sparingly.

3 tbsp Onion chopped. Lightly crush those in a mortar and pestle. To make the perfect butter bean dip you need just olive oil lemon juice and a bit of salt. Serve with the carrot batons and toasted pitta for dipping.
